Recipe Adventure: Kale Caesar Salad with Polenta Croutons

A few weeks ago I got this really awesome vegetarian recipe book as a random gift from Andrew. It’s called Forest Feast by Erin Gleeson. Her book is visually stunning with hand drawn watercolour illustrations mixed with photography. Each recipe is easy to follow with visual instructions instead of paragraphs of text (my kinda book). There’s so many delicious recipes I want to try, there’s appetizers, cocktails and mains. Andrew and I made the Kale Caesar for dinner and it was delicious, so I thought it would be a good way to share the book with all of you.

Ingredients:
10 Kale leaves
1/2 Cup Parmesan
1/4 Cup Pine Nuts
8oz. (160g) Polenta
1 Tbsp Olive Oil

Dressing:
3/4 cups olive oil
2 cloves garlic minced
1/4 cup yogurt
1 Tbsp lemon juice
2 Tbsp dijon mustard
Mix well with a fork

Directions:
Chiffonade kale leaves
Grate parmesan cheese
Toast pine nuts
Cut polenta into 1 inch cubes and fry in olive oil until golden
Put dressing on the kale, toss and top with polenta cubes, pine nuts and cheese

Overall I thought this recipe was excellent and super easy. I’ve never had polenta served this way, it was so crispy and a great alternative to croutons. The dressing has so much flavour, but you have to really like garlic. If you’re looking to add some fresh and easy recipe ideas to your daily routine I really recommend getting this book, most are so simple you can find time to make them during your busy week.
