Recipe Adventure: Juicer Pulp Muffins

Do you own a juicer? If so, this recipe is for you. Occasionally I like to have a fresh juice for breakfast or lunch, but I get sad when I see how much pulp is left in the waste container when I’m done. I just can’t bring myself to throw it out! So yesterday I made a point to trim my fruits and veggies of any seeds before it went into the juicer so the pulp would be perfect for baking.

First lets review what went into my fresh juice:
5-6 large carrots
1-2 apples skin on, seeds removed
2 lemons peel and seeds removed
1 inch piece of fresh ginger

I took the juicer pulp from the waste container and set it aside while I prepared my ingredients for a fibre packed muffin. The muffins are perfect for breakfast or afternoon snack. If you’re curious, I have this Breville Juicer and I love it so much, it’s super easy to clean and makes great juice.

Juicer Pulp Muffin recipe

Here’s the recipe:

Juicer Pulp Muffins (Garbage Muffins)

Ingredients:
4 eggs
½ cups coconut oil
1 ¼ cups brown sugar
2 cups whole wheat flour
2 teaspoons baking soda
2 teaspoons baking powder
1 tablespoon chia seeds
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ teaspoon ground clove
¼ cup chopped walnuts
¼ cup raisins
3-4 cups pulp from your juicer

Directions:
Preheat oven to 350° F

In a large bowl, beat together eggs, coconut oil, sugar.
Mix in flour, baking soda, baking powder, nutmeg, cloves, cinnamon and chia seeds.
Stir in pulp mixture from your juicer and fold in nuts and raisins.

Spoon into paper lined or well greased muffins tins.
Bake for 20-25 minutes.
