Vegan chocolate mousse? Yes!! and it’s actually so good, so don’t be fooled by the word vegan even if you’re not vegan! I’m not vegan, but I’ve been trying to reduce my meat and animal product intake over the past year by introducing new recipes, swapping out ingredients I’d normally use for something plant-based instead. Generally, this means a healthier diet with more vegetables, but occasionally I want to indulge in something sweet, this recipe does the trick.

Speaking of trick, you can totally trick your friends into thinking this is actually full cream chocolate mousse because the texture is so light, smooth and creamy. Want to know the main ingredient? It’s tofu! Yes, that’s right, I couldn’t believe it either, but in general plain tofu tastes, well, plain. So once you mix it with chocolate and blend it until it’s fluffy, you’ll have no idea it’s in there.

The added benefit is this vegan chocolate mousse is high in protein, so it’s technically a healthy snack haha. But really this is a perfect recipe for a dinner party, it’s easy and ideal to split into many servings and garnish with fruit and additional shaved chocolate or nuts.

Vegan Chocolate Mousse Recipe

Ingredients
700g soft tofu
300g dairy free dark chocolate (75% or darker)
1 tablespoon cold pressed coconut oil
Maple Syrup (1-2 tablespoons depending on how sweet you want it)
1 tablespoon Vanilla Extract
pinch of sea salt

Method
Place chocolate and coconut oil in a heatproof bowl over a pot of boiling water, stir until melted and silky, make sure the bowl doesn’t touch the water in the pot. This is a double boiler melting method, alternatively, you could microwave the chocolate until it melts, just be sure to do it in short spurts and stir often so it doesn’t burn.

Rinse tofu with water and dry it with a clean towel. Place tofu in a high-powered blender, it’s best if your blender has a tamper tool so you can mix it completely while it’s blending. I used the Breville Boss for this and it works great, you could use a Vitamix or perhaps a food processor could work if you blend for an extra long time, but I can’t guarantee a smooth texture with a food processor.

Blend tofu with vanilla extract, salt and maple syrup until very smooth.

Once the chocolate has completely melted, add it to your mixture and blend until fully incorporated and the mixture looks smooth. Give it a taste to decide if you want it sweeter or if it needs more salt.

Once it’s all mixed up, divide into small glass containers and chill for a few hours until set.

Top with grated hazelnuts, almonds or dark chocolate. Serve with fruit or as is. Enjoy!
