Christmas is almost here and I like to spend my down time baking delicious things. My favorite cookie has to be a classic ginger snap. Nothing says Christmas like cinnamon, ginger, nutmeg and clove. My recipe is seriously simple and seriously good. The secret? I use fresh ginger! Using fresh ginger adds to the flavor and keeps the cookies moist. Crunchy on the outside and chewy in the center, they are to die for.
Classic Ginger Snap Cookie Recipe
Ingredients:
¾ cups butter
1 cup brown sugar
¼ cup molasses
1 egg
2 cups flour
2 teaspoons baking soda
¼ teaspoon ground clove
2 teaspoons ground cinnamon
3 tablespoons fresh ginger (Use a cheese grater)
1 teaspoon ground ginger
⅓ cup white granulated sugar for decoration
Directions:
Preheat oven to 375°F
Mix together brown sugar, butter, molasses, egg.
Add flour, baking soda, spices. Mix until combine.
Roll into 1 ¼ inch balls
Roll balls in white sugar
Place 1 inch apart on cookie sheet and lightly press down
Bake for 9-11 minutes.
(9 minutes if you want a chewy cookie, 11 minutes or longer if you want a firm crunchy cookie.)
