Vegan Cheesecake Cashew Cups

Vegan Cheesecake Recipe

When the good weather comes out it always inspires me to try new recipes and I’ve really been into incorporating plant based recipes into our regular routine because I physically feel better eating less meat and dairy. I’ve really been inspired by the Minimalist Baker in recent months and my latest recipe love are these Vegan Cheesecake Cashew Cups.

With just 7 ingredients you can have a delicious dessert! They’re so creamy and satisfying, perfect for when you’re craving a treat but they’re still somewhat healthy.Read More »Vegan Cheesecake Cashew Cups

Peanut Butter Oat Bar Recipe

Maple Sea Salt Peanut Butter Oat Bar Recipe

This maple sea salt peanut butter oat bar recipe is so good and (somewhat) good for you too. Filled with healthy fats from coconut oil and natural peanut butter. I’d also consider them low sugar because it’s sweetened with maple syrup, but really I guess it’s still sugar, but better for you because it’s not refined white sugar. Although there is maple syrup in the oatmeal base too, you can make these delicious bars without the oatmeal base, they firm up in the freezer just as good without the oat base because of the coconut oil and the natural peanut butter, I’d even consider them a similar texture to fudge.

These little peanut butter oat bars are so satisfying, that subtle sweetness from the maple syrup goes so great with a sprinkle of sea salt.

bourbon soaked cherries and vanilla ice cream

Recipe Adventure: Bourbon Soaked Cherries with Vanilla Ice Cream

It’s time! Remember back in the Summer time when I spent a few weekends canning so much fruit? To refresh your memory, check out my post on canning bourbon cherries. I also canned peaches and pears. But as I was saying, it’s time! Time to open the jars! Let me rephrase that, time to open a jar full of Summer! *happy dance*

Andrew and I are gifting a bunch of them for the holidays, so of course we have to try them, just to be sure they’re good enough to give as gifts. Pretty good excuse if you ask me. Plus, it’s very satisfying to open a jar of food that I didn’t buy in the store.
