Maple Sea Salt Peanut Butter Oat Bar Recipe

This maple sea salt peanut butter oat bar recipe is so good and (somewhat) good for you too. Filled with healthy fats from coconut oil and natural peanut butter. I’d also consider them low sugar because it’s sweetened with maple syrup, but really I guess it’s still sugar, but better for you because it’s not refined white sugar. Although there is maple syrup in the oatmeal base too, you can make these delicious bars without the oatmeal base, they firm up in the freezer just as good without the oat base because of the coconut oil and the natural peanut butter, I’d even consider them a similar texture to fudge.

These little peanut butter oat bars are so satisfying, that subtle sweetness from the maple syrup goes so great with a sprinkle of sea salt.

Easy Cheddar Cheese Scone Recipe

On weekends I like to indulge in a little baking and comfort food. This cheddar cheese scone recipe is one of my go to recipes for something quick and delicious for brunch or an afternoon tea.

I have a Kitchen Aid Mixer so I make them in 1 bowl and it takes no time at all with virtually no mess. I just throw all the dry ingredients in the bowl, mix together and then add in the butter, cheese and finally the milk.

When it all comes together I put it onto a cutting board and flatten the giant ball out with my hands until it’s even and then I cut into even wedges, transfer to a baking tray and about 10 minutes later, delicious crispy cheesy scones are ready!

Why I Dislike My Gas Range

I decided to write about my gas range after having a few recent conversations with people helping them decide if they should go electric or gas. I used to be all about electric only because it’s what I grew up with and I had a mild fear about using gas, but when we moved into our place over 3 years ago, the gas bill was included in our strata fees and the gas line was already there, so it was a no-brainer to go with a gas range. I immediately got over my fear and now I’ll never go back.

Since we had a limited time to complete our renovations and a very limited budget, we picked our appliances pretty quickly and our gas range was one of the more affordable Maytag ranges and right from the beginning there were problems. The seal around the door has never been installed correctly even after they came for a service call.

Then after a few months the grate that’s on the top of the stove corroded, not just a little bit, but a lot. It was so shocking it made me completely regret purchasing this stove. After a few weeks of trying to get in touch with Maytag, they said they’d send me a replacement grate, but in the end they only sent me half instead of the full 2 pieces. It’s so incredibly ugly and impossible to clean now.

Recipe Adventure: Juicer Pulp Muffins

Do you own a juicer? If so, this recipe is for you. Occasionally I like to have a fresh juice for breakfast or lunch, but I get sad when I see how much pulp is left in the waste container when I’m done. I just can’t bring myself to throw it out! So yesterday I made a point to trim my fruits and veggies of any seeds before it went into the juicer so the pulp would be perfect for baking.

First lets review what went into my fresh juice:
5-6 large carrots
1-2 apples skin on, seeds removed
2 lemons peel and seeds removed
1 inch piece of fresh ginger

I took the juicer pulp from the waste container and set it aside while I prepared my ingredients for a fibre packed muffin. The muffins are perfect for breakfast or afternoon snack. If you’re curious, I have this Breville Juicer and I love it so much, it’s super easy to clean and makes great juice.

This recipe is very similar to my lemon loaf recipe I shared last year. It has the same base ingredients, but uses lime, toasted coconut and poppyseeds.

This loaf is super moist because it uses yogurt instead of butter and after it’s baked, you infuse the loaf with lime juice for added flavour. There’s also a delicious lime glaze that goes over the top along with toasted coconut.
