Recipe Adventure: Wonton Wrapper Lasagna Made in a Muffin Tin

Yes you read that title correctly, this is a recipe for lasagna made in a muffin tin, using wonton wrappers. Why wonton wrappers? Well firstly they make this recipe super easy and fast. Secondly, wonton wrappers cooked in a muffin tin means extra crispy bits! You know the crispy bits I’m talking about, those edges of the giant traditional style lasagna that get super crispy. Don’t get me wrong, I love me a big cheesy lasagna, but it takes forever and I end up using way too much cheese most of the time, which isn’t easy on my figure.

Here’s the recipe
1 package wonton wrappers
1 package lean ground turkey
1 onion
1 medium zucchini
1 medium eggplant
1 small tin tomato paste
2 cups Ricotta Cheese
1/2 cup grated Asiago Cheese
olive oil
1 tsp oregano
1 tsp thyme
1 tsp sage
1 tsp basil
Fresh garlic cloves
salt and pepper to taste

(Makes approx. 24 “muffins”)
Preheat oven to 350°F
Oil 2 standard muffin tins and set aside. Alternatively you could line with silicone cupcake liners. Slice zucchini and eggplant into 1/2 thick rounds, drizzle with olive oil, salt and pepper and roast for 20 minutes or until cooked. While your veggies are roasting, finely dice 1 onion and crush a few cloves of garlic, add to a medium saucepan with olive oil. Once the onion and garlic are cooked a bit, add your package of lean ground turkey and cook until browned. Next add 1 small tin of tomato paste, oregano, thyme, sage, basil, salt and pepper. Cover and simmer for 10 minutes.

Take your muffin tins and place a wonton sheet in each cup. Don’t worry about being perfect, you just want to create a cup for your ingredient to sit in. Scoop in about a tablespoon of your meat mixture, then layer in a cooked zucchini round and eggplant round. Top with a scoop of ricotta cheese and cover with another wonton wrapper. Depending on how deep your muffin tins are, you can stop here and top with some grated Asiago cheese, or keep going with another layer.

Try experimenting with fillings and feel free to add more cheese!

Bake for 30 minutes or until golden on the edges.
