These oatmeal raisin cookies are chewy and full of flavour, it’s really hard to eat just one. The best part is they’re super easy to make and you’ll only need one bowl, I like to make them in my Kitchen Aid Mixer because it’s fast and clean up is so easy.

Ingredients:
½ cup butter
1 cup brown sugar
¼ teaspoon cinnamon
1 tablespoon molasses
1 cup flour
1 cup oats
1 teaspoon baking powder
½ teaspoon salt
1 egg
1 tablespoon vanilla
1 cup raisins
¼ crushed nuts of your choice (optional)

Directions:
Preheat oven to 375°F
Cream butter, sugar, molasses in a mixer. Then add egg and vanilla and mix until combine.
Add in flour, oats, salt cinnamon and baking powder and mix until well combine.
Stir in raisins (and nuts if you want them).
Scoop onto parchment lined cookie sheet leaving plenty of room between each scoop as they do spread out.
Bake for 12 -15 minutes depending on your oven and desired texture. Cool on a rack for 5 minutes.

Serve with a big glass of cold milk (I like almond milk). Enjoy!
